Fine Gastronomy

Food & Wine pairing

Looking for a private dinner with a difference? Bask in the pleasure of our most intimate, unique and meticulously crafted gastronomic experience. Hosted by owners Ann & James Frost, we start with a visit and wine tasting in the vineyards and beautiful barrel room.
The dinner itself incorporates our most elaborate menus, paired with an eclectic selection of our wines, including reservas, limited editions or older vintages. Wines and the harmonisation of the dishes are introduced by James alongside anecdotes of the history of the Quinta and our project so far.

Authentic Experiences

Workshop Pão de Mafra
Our bread is the reason why the small town of Mafra is well known across the country.
This workshop gives participants the chance to get “stuck in” in the process of mixing, kneading, baking and eating! You can make your own small loaf, all under strict supervision of the ladies from the village who have perfected this art during decades of bread-making. While the bread is in the oven, we will have a private visit to the property. This activity is perfect to combine with a Wine Lover or Wine Expert activity. The delicious result will be tasted: the hot bread coming out from the oven, seasoned with rough salt, olive oil and garlic, the Portuguese traditional Tibornia is unforgettable. You cannot get more Portuguese if you tried.

 Wine Blending
A fun approach to the fascinating world of wine and a perfect ice breaker for an after lunch or dinner party.
Promotes team spirit, strengthening relationships between team members, develops a sense of accountability and commitment and the capacity of planning, management and leadership. Also promotes creativity of the individual and the team. Keeping the focus on the wine, where the senses are more important than logic. Teams are challenged to make their own wine from single vine varieties. The characteristics of each variety will have been explained during the tasting. Each team will have the opportunity to make their own mixture using individual proportions, until obtaining a finished product, which will be bottled and labelled. To evaluate the final product, a team of judges consisting of our winemaking professionals and a member of each team previously chosen – this is a blind tasting and aroma, flavour and presentation will be evaluated. Each member of the winning team will receive a bottle of wine as a prize.

Tiles
Ever wondered how this is done?
We start with a welcome glass of wine and a private visit to the property: old cellar, private chapel, wine shop. The workshop will be held by a local artist in one of our private rooms. It gives guests a quick overview of the history of tiles. Guests can learn the basic skills using tiles pre-coated with raw glaze and brushes or sponges to apply their pattern or figurative motives, using valuable cobalt oxides. Guests can acquire the glazed tiles as a souvenir. The tiles will be fired at over 1000ºC overnight and can be ready the following day – hot off the kiln!

Olive Oil Tasting
A journey from the North to the South of Portugal
Tasting of a selection of 5 Portuguese extra virgin olive oils of organic productions. The tasting takes guests on a ‘culinary journey’ from the North to the South of Portugal, each region reflected with the best it can offer, highlighting the fine culture of an ancient tradition. This is an informal tasting, accompanied by the famous Regional Mafra bread and fleur de sel. On request, a variety of Portuguese olives can enhance this experience. We suggest this tasting as a complement during wine tastings or in a group picnic.

Delightful food, charming view

Vineyard Picnic

One of our favourite ways to truly unwind: a good old-fashioned picnic in the vineyards. Think family and friends, rugs, blankets and cushions in the long grass, straw bales, delicious country food full of goodness from our vegetable garden, estate wine, perhaps add a guitar or let the birds do the background music – what else would you need to enjoy life?

Festival Style

Inspired by our annual harvest festival, the “Festival da Nossa Terra” was born out of the urge to celebrate the harvest and life. This is an experience with all the senses to discover the Portuguese soul through gastronomy, wine, music, dance, arts & crafts. Participate in an authentic village party and become a local from our “terra”.
All areas will be set up and decorated with handmade festive garlands, party lights, straw bales, wine barrels as cocktail tables, burlap sacks, colourful tablecloths and hand painted signage. Guests will be welcomed by the spirited if not shrill singing of a traditional folkloric dance group; singers will accompany them to the vineyards or Family House where property owners James and Ann Frost welcome guests with a glass of the Quinta’s wine. James will give guests a brief introduction to the history of the Quinta, the family story (short version) and talk a little about the ambitious wine project, after which guests are invited to discover and participate in this lively Festa.
