Description

Ageing:

The two barrels of 2015 spent 2 years in the used barrels.
The single barrel of 2017 spent 6 months in the used barrel.

Tasting Notes:

This wine is all about freshness and purity of fruit and flavour. Sour cherries and forest fruits with bright notes of the forest vegetation; wild mint, eucalyptus and pine resin. An extremely versatile wine to pair with food; excellent acidity, medium body and tannins, and lovely balance.

Selected, handpicked grapes reach the winery in boxes of 20kg. Smooth pressing of whole bunches by pneumatic press to extract the best must, which is left to settle for one day at 7°C to decant. Fermented in steel vat at low temperatures (12/14°C).
